Carrot Cake Easter Cupcakes w/ home made Cream cheese frosting



April Fool's!
I loved this idea I stole from one of my favorite cupcake books.

*"Mashed Potatoes"= Lemon cupcakes with cream cheese frosting, yellow Starbursts and melted caramel
*"Veggies"=Lemon cupcakes with green cream cheese frosting, green skittles and cut up orange Starbursts

Fun eh?

    Haha! That mashed potato and veggie plate looks surprisingly real! Love that. :)
